Hi Daniel,

You have posed a very interesting question that I will try to answer. If 
one looks in introductory nutrition textbooks, you will find that mushrooms 
are listed with vegetables and legumes on the USDA food composition Tables. 
I would classify mushrooms as vegetables based on the fact that they are 
high in water, low in protein and fat. Peas and beans (legumes)are 
classified with meat because of their high protein content. They are aslo 
higher in fat. I hope this answers your question.
