Yes, you can use sodium acetate, but you are right in that most protocols suggest that you use 3M, not 7.5M. I usually use about 1/10 volume of 3M Na Acetate pH 5.0, before adding isopropanol (1 x volume) or ethanol (2-3 x volume) to precipitate DNA. If you use ammonium acetate at 7.5M, you should add 1x volume. YOu can also use NaCl, LiCl, or any salt. Some protocols actually do not advise adding extra salt at the precipitation stage because the extraction was already in a high salt buffer.See here for more information: DNA Precipitation
