Catalase
(EC #1.11.1.6) is
among the best understood enzymes as well as being ubiquitously present
throughout nature. As such, it has been used in schools the world over as
an introduction to enzymology. Catalase converts hydrogen
peroxide, H2O2, into water, H2O,
and oxygen, O2. 78 forms of catalase have
been isolated to date from several organisms, including humans, flies,
corn, and potatoes. Catalase is related to the Peroxidases,
but is distinct in its production of O2.
